
Kadai Mushroom Recipe
Anish JaiswalKadai Mushroom is a flavorful and aromatic dish from Indian cuisine, made with fresh mushrooms cooked in a spicy tomato-based gravy. It is traditionally prepared in a kadai (wok) and is best paired with naan, roti, or steamed rice. Here's a simple recipe to try at home.
Ingredients
For the Spice Mix
- 1 tsp coriander seeds
- 1 tsp cumin seeds
- 2 dried red chilies
For the Curry
- 200g button mushrooms, cleaned and sliced
- 2 tbsp oil or ghee
- 1 medium onion, finely chopped
- 1 large tomato, pureed
- 1 medium green bell pepper, chopped
- 1 tsp ginger-garlic paste
- ½ tsp turmeric powder
- 1 tsp red chili powder
- ½ tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions

Prepare the Spice Mix
- Dry roast coriander seeds, cumin seeds, and red chilies until aromatic.
- Grind them into a coarse powder and set aside.

Sauté the Mushrooms
- Heat 1 tbsp oil in a kadai and sauté the sliced mushrooms for 3-4 minutes until slightly golden. Remove and set aside.

Cook the Base
- In the same kadai, add 1 tbsp oil and sauté onions until golden brown.
- Add ginger-garlic paste and cook until the raw smell disappears.

Add Spices and Tomato Puree
- Stir in turmeric, red chili powder, and the ground spice mix.
- Add the tomato puree and cook until the oil separates.

Combine Ingredients
- Add the sautéed mushrooms and bell peppers. Mix well.
- Pour ¼ cup of water, cover, and let it simmer for 5-7 minutes.

Finish with Garam Masala
- Sprinkle garam masala and adjust salt. Stir and cook for another minute.

Garnish and Serve
- Garnish with fresh coriander leaves and serve hot.
